Sometimes I like to make pancakes for dinner.
x
Tonight I felt guilty (and nervous) about the massive amounts of sugar in the traditional syrup I normally float my pancakes in.
x
So, I made THIS blueberry sauce that was one of the easiest recipes ever and got two happy thumbs up from the handsome one.
x
In other news, the granola bars have received rave reviews - here's the link in case you missed those as well. They're moderately easy, too, but seriously my kids could make the blueberry sauce...it was that simple.

I'm on a kick, and with the possibility of severe abdominal pain looming, the kick might actually be permanent-ish. Here's a synopsis (since part of my kick is getting better sleep, too):
x
- Reading this book called Food as Medicine and wishing I could download every bit of knowledge into my brain like Neo on the Matrix
x
- Finding the food tips extremely helpful on this site appropriately named GallbladderAttack.com
x
- Wishing I could live ten lives, because in one of them I would attend this college and become a healer (maybe some night when I can't sleep I will elaborate on what I would do with the remaining eight lives if you're lucky)

Remember that time I got really sick and had to have my gallbladder out? [Yes, I know it has nothing to do with Carolyn wearing a crocheted table cloth on her head like the blessed virgin mother, but I needed a graphic and this made me smile - I thought about taking a picture of my war-torn adbomin so be glad I spared you].

Well if your memory fails you of the past three weeks, here's a synopsis:
x
One time I got stomach aches after lunch. One day I left work and tried to lay very still all afternoon in hopes the pain would stop. One night my Aunt took me to the ER because I was getting rather unpleasant to be around, all grumpy and white-knuckled and such. That same night a young, perky doctor told me that I had acid reflux and needed to elevate the head of my bed (I may have mentioned that one before, if you can't tell...me and my $75 co-pay are still licking our wounds on that one). One day my compassionate doctor, seeing the look of 'I-can't-eat-anything-without-extreme-pain-and-I'm-scared' admitted me to the hospital. One day my body was probed. One day a surgeon said he was going to go after my gallbladder. For three days I feasted on nothing but jello and chicken broth. On a very important day the surgeon earned his keep and extracted my gallbladder.
x
Today is day seven sans gallbladder. Four good, three bad. Hopefully the ratio improves as time goes by.
x
Before now the only thing that landed me in a hospital was the birth of two children - which went off without a hitch I might add. So the last few weeks have been a little overwhelming. I don't like being sick and not knowing what is wrong. I don't like thinking I may not be able to eat certain foods because they give horrendous stomach pain (Friday night after the cooking class I was practically hallucinating, it was ugly, serious abdominal pain...seriously). I don't like not having any energy and little interest in everything around me.
x
I want to say thank you to everyone who's been praying, I know when I woke up Saturday morning and the horrendous (need I elaborate?) pain of Friday night was completely gone - that is God's blessing...even the stiches on my belly felt better...it was a relief beyond explanation. God is good.
x
I had previously toyed with the idea of embarking on better eating habits and what-not. Seems as though this health issue has thrust me upon the path since I was not going willingly. I found a website with lots of helpful information that I am reading through to see how to help my body get better, even better than before. And I am reading lots of books on diet and health. I made homemade granola bars tonight full of ingredients I had a hard time locating at the grocery store, and there are beets in my fridge that I shall attempt to tame tomorrow evening.
x
There's the synopsis of my new health adventure - along with a cute picture of Carolyn which should make the rambling worth it.
