We're on our fourth batch of these *cheese and spice tortilla chips* from the William Sonoma: The Kid's Cookbook. Everyone who has tried them says "DANG, those are good" or something really close to those words.

They're so easy I had to share the recipe:

Preheat oven to 400, line a baking sheet or two with foil

Melt about a 1/4 stick of butter
x
Mix together: 1/3 cup grated Parmesan cheese, 1 Tbsp. sesame seeds, 1 Tbsp. poppy seeds, 1/4 tsp. paprika, pinch of salt and a pinch of pepper.

Lay a flour tortilla shell on a cutting board. Brush on some butter, completely covering the top of the tortilla. Sprinkle on the spices you mixed up, about 2 Tbsp worth or so. Gently spread and pat into the tortilla shell. Cut into triangles. Place on the baking sheet.

Bake for 8 1/2 minutes, until they are golden brown. Allow to cool completely.

A note about this book: Despite the title, I think this would be an awesome gift for student going off to college. The first ten pages of the book explains what the difference is between 'chop' and 'mince', how to wash fruits and vegetables properly, how to properly measure ingredient, and more. Each recipe lists not only the necessary ingredients but also the equipment needed. And it is all from simple ingredients, creating healthy delicious food. Brilliant.
